This coffee is a versatile gem, perfect for any brewing method, whether hand or automatic. It features incredible notes of sweet pear and lime, accompanied by a delicate jasmine tea-like mouthfeel.
When the cherries arrive at the wet mill, they undergo a manual selection process to remove immature and overripe beans. Following this, the coffees are fermented anaerobically in pulp for 48 hours. They are then de-pulped and sealed for another 48 hours of anaerobic fermentation. After washing, the beans are dried for 12 days on raised African beds.
Wilson Ordoñez is a third-generation coffee producer from Farm La Aldea located in San Agustin, Huila, Colombia, who tends to his family's legacy with incredible dedication. In previous years, Wilson's farm mainly produced conventional coffee. However, recognising the potential in speciality coffee, Wilson has been steadily transforming the entire farm and is continually experimenting with new processes. Initially, it was challenging to persuade his mother, who belongs to a generation unfamiliar with these modern coffee processing techniques and non-traditional varieties. Nonetheless, after witnessing his recent successes in competitions, she has become supportive of his innovative approaches.
