Nestled in San Agustín, in the heart of Huila’s mountainous region, the plantation thrives on a clear mission: to care for both its people and the planet. Farmers receive fair wages and hands-on training, equipping them with tools for growth. Wilson Ordoñez and his team at La Aldea prioritise biodiversity and environmental stewardship by treating wastewater, protecting local wildlife, and fostering agroforestry projects that nurture healthy soil and ideal growing conditions.

Processing of the ripe cherries begins with pre-fermentation, and then they spend 48 hours in the fruit pulp to extract the maximum of natural sweetness. Next, rinsing and drying on special tables maintains a balance between moisture and aromas.
