You won’t find lightness or fruity acidity in this cup. This coffee is for those who crave depth and intensity—for fans of peaty whisky, dark chocolate, and bold flavours that linger. Its profile leans into leather, tobacco, and cocoa—dense, earthy, and full of character, yet surprisingly balanced. Instead of bright fruit or citrus, you get a velvety body and a long, dry finish that makes no apologies.
This lot comes from Finca La Colonia and Finca Arroyo, two farms nestled in Rancho Arriba—a mountainous area in the Cordillera Central region of the Dominican Republic, known for its fertile soils and mild tropical climate. Here, coffee ripens slowly, gaining structure and complexity from the altitude. Both farms are committed to sustainable practices: they reuse water, burn dried cascara to fuel the dryers, and compost part of the harvest to nourish the soil. Even the honey from their beehives stays on the farm, shared among the workers.
This is a coffee that doesn’t try to please everyone—and that’s exactly what gives it such a distinct, uncompromising edge.
