This lot from Carlos Cadena lands right in that spot. It combines biscuit-like sweetness with soft, fruity depth. To us, it brings to mind homemade chocolate chip biscuits in a generously loaded version, with dried cranberries and blackcurrants.

Description
That biscuit-like centre is the essence of this coffee. The sweetness leans towards shortbread and sweet dried cranberry, while blackcurrant appears in the background as a lightly tart, fruity counterpoint. The acidity is there, but it stays calm. It keeps everything in balance.
Lot 7475 comes from Finca Pocitos and was processed as a honey. The Mundo Maya cherries are picked at high ripeness, then, after depulping, they spend 48 hours in stainless steel tanks for anaerobic fermentation. The coffee is then dried for 8 days on African beds.
Behind this coffee is Carlos Cadena, the fifth generation of coffee producers in his family. For years, he has been developing the farm, experimenting with varieties and processing, and his work regularly appears in quality competitions. We hope that, with future harvests, his lots will keep finding their way back to our offer just as regularly.
