



Farmers in the southern region of Huila call this variety Aji due to the exceptional aroma and flavour of its cherries, reminiscent of a small chilli pepper. However, genetic analysis reveals a fascinating truth—Aji is actually an Ethiopian heirloom variety, adding even more uniqueness to its character. The entire harvest of this micro-lot, totalling 95 kg of green coffee, is exclusively available to us.
The first sip unveils layers of fruity sweetness. The flavour develops gradually—starting with juicy, slightly tangy strawberry, which then gives way to warm, honeyed notes of rooibos. In the background, a subtle yet still sweet floral note emerges, reminiscent of rose jam. The overall experience is both smooth and intense, with a depth that lingers on the palate.
In 2022, Luis Marcelino, the founder of Aroma Nativo, launched the Veci Project—a collaborative coffee production initiative. This project connects coffee growers who follow high-standard agricultural practices but lack the infrastructure to process coffee on their farms. Aroma Nativo supports them by purchasing coffee cherries at high prices and utilising its expertise in fermentation along with its modern processing facilities in Pitalito, Huila.
For this exceptional lot, farmers handpicked only the ripest Aji cherries to ensure the highest quality. They then underwent fermentation in a strictly controlled anaerobic environment before being pulped. After an initial drying phase of several days, the beans were reintroduced to fermentation tanks for rehydration with selected yeasts and bacteria. Finally, after this meticulously supervised process, the coffee was returned to raised drying beds for a full 14 days. The final and equally crucial stage—a three-month stabilisation period in carefully controlled temperature conditions—ensures optimal preservation of quality and extends the coffee’s longevity.
